Usually repaired. The burner, igniter and thermostat are all serviceable parts. Full replacement is rare, though a burner face that has cracked through does need the element changed rather than cleaned.
That is exactly how it is designed to work - the gradient is the feature, and it is what lets you hold a sauce at the rim while searing in the centre. If the whole plate is underperforming, then the burner or thermostat underneath needs service.
More often it is the thermostat or its sensor cycling badly rather than the element. The plate is thick enough to hide a control fault, so we watch it through a full heat cycle instead of taking a single reading.
Both, and cleaning comes first. A proper port and orifice service restores a surprising number of burners with no parts at all. We only quote parts when the electrode, module or burner assembly has genuinely failed.
Once a year is sensible for a rangetop that gets real use, particularly under a hood that is undersized. It is the difference between a port clean and a burner assembly replacement.

A Wolf rangetop is the cooking surface without an oven beneath it, usually paired with wall ovens in a kitchen designed around serious cooking. All the heat lives in the top, and the configurations vary enormously - sealed burners, a French top, an infrared charbroiler, a griddle - so the diagnosis depends entirely on which surface is misbehaving.

How Wolf rangetops fail
Sealed burners on a rangetop take more abuse than the same burners on a range, simply because a rangetop is usually the centre of a kitchen that cooks every night. The failure sequence is predictable: boil-over residue bakes into the low-stage ports, the simmer stage gets unreliable, and owners compensate by running the burner higher. That accelerates carbon build-up on the electrode, and eventually the burner stops lighting reliably at any setting.
The infrared charbroiler is a different animal. It runs a ceramic or metal-fibre burner at a much higher surface temperature than a conventional ring, and its failure mode is cracking rather than clogging. A charbroiler that lights but never reaches temperature, or that glows unevenly across its face, usually has a fractured burner element - and running it that way puts unburnt gas past the flame front.
French tops confuse people more than anything else on a rangetop, because they are designed to be uneven. The plate is hottest in the centre and cooler at the rim, and that gradient is the feature. What is not normal is the whole plate underperforming, and that traces back to the single burner underneath, its thermostat, or a warped plate that no longer sits flat against the heat.
Griddles fail at the thermostat more often than at the element. The plate is thick, so it holds heat and masks a control that is cycling badly. If a griddle overshoots and then drops well below the setting, or scorches in one zone, it is almost always the thermostat or its sensor rather than the heating element itself.

Infrared charbroiler burners, French top plates and griddle thermostats are ordered to your configuration, since a 36" rangetop can be built half a dozen different ways and the parts are not shared between layouts. Gas valves are available individually rather than only as a full manifold, which keeps a stiff or leaking valve from turning into a much larger job. Sending a photo of the top when you book lets us bring the right parts on the first visit.

What Tampa does to this appliance
Rangetops are the appliance most often installed in the big open kitchens around Westchase, Carrollwood and Brandon, and those installs share a quirk worth knowing: a powerful rangetop under an undersized hood produces grease-laden air that settles straight back onto the burners. That is the single biggest accelerator of port clogging we see locally. The second thing we check on any Tampa rangetop call is the shut-off valve itself - many are behind cabinetry and have not been turned in years, and a valve that will not close is a safety problem we would rather find during a routine visit than an emergency one.

Keeping your Wolf out of trouble
- Service the burner ports annually if the rangetop cooks daily, especially under a hood that is undersized for the output beneath it.
- Clean the infrared charbroiler face carefully rather than aggressively - the burner element cracks under impact, not under heat.
- Check that the gas shut-off valve behind the cabinetry still turns; many have not been moved in years.
- Watch for soot on pan bottoms, which is the earliest sign that a burner is running rich.
- Let the griddle come to temperature fully before judging it - the plate is thick enough to mask a thermostat that is cycling badly.

Repair or replace: how we think about it
A rangetop has no oven cavity and no door, which means there is very little in it that ages badly. Burners, valves, igniters, spark modules and the infrared elements in a charbroiler or griddle are all replaceable, and the top itself is usually in good condition long after the cooking has become frustrating. Restoring one to how it performed when new is normally a parts-and-labour job rather than a decision.
Replacement becomes a real conversation only when the cutout, the hood or the gas supply is changing anyway, or when a top has suffered physical damage that would need multiple castings. Otherwise a rangetop that simmers badly, lights unreliably or runs one burner rich is a repair - and usually one that finishes in a single visit.
