Burner tubes are the first casualty. They are stainless, but stainless is not immune - it is corrosion-resistant, not corrosion-proof, and the combination of winter damp, high heat and grease acid attacks the tube from the inside out. The tell-tale is uneven flame along the tube: the ports nearest the failure starve while the rest look normal. Once a tube has corroded through, cleaning does nothing and it must be replaced for safety.

Igniters and electrodes fail differently outdoors than indoors. Indoor electrodes crack; outdoor ones corrode at the connection and lose continuity. A grill that sparks weakly, or that lights on the second or third attempt, usually has an electrode whose earth path has degraded rather than a failed module. Checking the earth before replacing the module saves a part that does not need replacing.

Infrared burners - used for searing and on some rotisserie backburners - fail by cracking. They run far hotter than a tube burner, and thermal cycling in combination with rain hitting a hot surface produces stress fractures. An infrared burner that glows patchily, or that never reaches searing temperature, has almost always fractured rather than clogged.

The parts people forget are the gas train and the rotisserie motor. Regulators sit outdoors and age; valves seize when a grill sits unused through a wet summer; rotisserie motors take water ingress at the shaft. None of these are dramatic failures, but all of them turn a working grill into an unreliable one, and all of them are cheap to address before they strand you mid-cook.

• Cover the grill when cool, but understand that a cover does not stop freeze-thaw damp through the winter.

Outdoor grills are the one appliance we service where replacement is often the honest recommendation, and the reason is corrosion rather than design. A grill that has spent several Chicago summers near the lake can have burner tubes rusted through from the inside, corroded igniter wiring and hardware that no longer holds, all at once. Replacing three or four assemblies on a unit whose frame is also going is not good value and we will say so.

But plenty of grills look worse than they are. Burner tubes, igniters, regulators, valves and grates are all replaceable, and a unit that has been covered and serviced is usually a straightforward repair even after a decade outdoors. One more thing to weigh before deciding: how the grill is installed. A freestanding cart unit is straightforward to replace. A grill built into a masonry island is not - the cutout, the gas run and the surround were built around that specific model, and a replacement that is even slightly different in size turns into masonry work. On built-in grills that consideration usually decides the question on its own.
