How Viking ice makers fail
The fill stage fails most often, and it fails quietly. The inlet valve meters a precise volume into the mould, and as it weakens the mould underfills. There is no error code - just hollow or undersized cubes, which owners usually attribute to the freezer being too warm. The fill tube compounds this: it passes through cold space, and water left standing in it after a cycle can freeze into a plug that blocks the next fill entirely.
Scale is the defining local problem. Miami water leaves mineral deposits on every wetted surface, and in an ice machine those surfaces are the mould, the evaporator and the water distribution path. Deposits reduce heat transfer, freeze cycles lengthen, and production falls gradually enough that owners adjust rather than call. Left long enough, a scaled machine looks broken when it is merely encrusted.
Harvest is the stage that produces the "made one batch and stopped" complaint. On in-freezer modules a motor drives the ejector arm; on undercounter machines a hot-gas cycle releases the slab. Either way, if harvest does not complete, the mould stays full and the next fill cannot begin. The machine is not stuck for a mysterious reason - it is stuck because it is still holding the previous batch.
Freezer temperature is behind more ice complaints than the ice maker itself. An in-freezer module needs the compartment near zero degrees to finish its cycle in the expected time. A freezer sitting at ten degrees for an entirely unrelated reason slows or stops ice production, and the module gets blamed for a fault that belongs elsewhere. Verifying compartment temperature first is not a formality; it regularly changes the diagnosis.
Undercounter machines add a drain circuit that in-freezer modules do not have. These units discharge water continuously as part of making clear ice, and a restricted drain or a failed pump either floods the cabinet or trips a safety shutdown. Water on the floor under a Viking undercounter machine is a drain fault, not an ice fault.

Parts: what this repair actually needs
Inlet valves, fill tubes, ice maker modules and filters are stocked items. Harvest motors and thermostats are ordered by model, because the in-freezer modules and the 15" undercounter machines share very little. More often than any part, though, what these machines need is a proper service descale and time - a unit running on unfiltered Miami water for three years frequently needs nothing replaced at all. We quote descaling separately from parts so you can see exactly what is maintenance and what has genuinely failed.

What Miami does to this appliance
Hard water is the single biggest determinant of how long an ice maker lasts here, and it is worth stating plainly: on unfiltered Miami supply, expect to descale every six to twelve months, at the shorter end for an undercounter machine that runs hard. Scale is also why cubes turn cloudy - the dissolved minerals that make our water hard are exactly what clouds the ice as it freezes. Fitting a filter on the supply line does more for both ice quality and machine life than any repair we can carry out, and it is the first thing we recommend on every ice maker call regardless of what brought us out.

- Check that the freezer is genuinely near zero before blaming the ice maker.

Repair or replace: how we think about it
Ice machines take more abuse from Miami water than anything else in the kitchen, so this is one of the few places where replacement is a genuine option. That said, most calls are a water valve, a filter, a thermistor, a harvest problem or accumulated scale - all worth repairing, and all considerably cheaper than a new undercounter machine plus the panel work to make it look right.
The point where we stop recommending repair is a machine that has run for years on unfiltered supply with no descaling, where scale has reached both the evaporator and the pump. At that stage you are rebuilding most of the water path, and the sum of it starts to look like the value of the machine. We will tell you which side of that line you are on after looking at the evaporator, not before.
The other thing worth weighing is what the machine is for. An ice maker inside a refrigerator is a component of an appliance you are keeping regardless, so repairing it is rarely a close call. A standalone undercounter machine is a separate appliance with its own value, its own panel and its own cutout - which means both the repair and the replacement carry costs beyond the box, and it deserves a proper comparison rather than a reflex in either direction.
